Fall is one of my favorite times of the year. I love when the weather cools down and theres a slight chill in the air. I always start craving soups and PUMPKIN! I love pumpkin anything! When I saw these muffins on The Novice Chef blog, I immediately added them to my menu for the month. Im so glad I did. The crystallized ginger gives a really nice flavor to the pumpkin. These are soooo good!

Ingredients:
1 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 tsp ground ginger
2 tsp pumpkin pie spice
1/4 cup crystallized ginger, minced
1 egg
1/4 cup brown sugar
1/2 cup canned pumpkin
1/4 cup molasses
3 tbsp butter, melted
2 tbsp milk
Directions:
Heat oven to 350. Spray muffin pan with nonstick cooking spray.
In large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ground ginger,and pumpkin pie spice. In a seperate bowl, whisk together egg, sugar, pumpkin, butter, milk, and molasses. Add minced crystallized ginger to dry ingredients. Fold pumpkin mixture into the dry ingredients until combined. Dont overmix! Divide batter into muffin tins and bake for 20-25 mins. Let cool and remove from pan. Enjoy!
