Sausage and Spinach Calzone

This thing is sooo good. Tastes like a really really really sinful pizza!!! It actually isnt too bad for you considering it has tons of spinach in it and is made with lean turkey sausage. If you like sausage pizza, you must try this!
Ingredients:
2 lb. baby spinach
8 oz. sweet italian turkey sausage
2 tbsp evoo
1 onion, chopped
12 oz. mozzarella- I used one bag of italian blend cheese
1/4 cup grated parmesan cheese
salt and pepper
1 store bought pizza dough
1 1/2 cups marinara sauce
Directions:
Preheat oven to 425.
Bring 1/4 cup water to a boil in large skillet.Add half the spinach and wilt. Remove from pan and drain. Repeat with remaining spinach. Cool and squeeze out as much water as possible. Coarsely chop and add to large bowl.
In same skillet, heat evoo. Cook sausage until brown. Add onions and cook until soft. Transfer to bowl with spinach. Stir in cheese and season with pepper and salt.
Grease cookie sheet with nonstick spray. Stretch out dough to 10×15 rectangle. Mound sausage mixture lengthwise down center of pizza dough leaving 1 in. border on short ends. Fold 1 in. edges toward center then fold each long side over filling. Flip seam side down. Drizzle with evoo. Cut a few small vents in top. Bake 30 mins. Serve with marinara.

Yaki-Mandu Pizza

After having tons of leftover yakimandu from last nights dinner, Jeremy suggested a yakimandu pizza. I didnt try it but he said it was very good. For the sauce I just made a simple bechamel sauce. I used a premade personal pizza crust so it was really quick to make. When this was done, Jeremy drizzled a little soy sauce over the top of the pizza.
Bechamel sauce
2 tbsp butter
2 tbsp flour
1 cup milk
1 cup parmigiano reggiano
Melt butter in saucepan over med heat. Whisk in flour and let it cook out 1 min. Whisk in milk until slightly thick. Stir in parmigiano reggiano.
To assemble the pizza:
Drizzle about a tbsp of evoo on premade personal pizza crust. Spoon on some bechamel sauce. Top with about 1 1/2 cups leftover yakimandu. Top with mozzarella. Bake 10 mins at 425.

I made my first true homemade pizza and it was awesome!! Homemade crust and homemade sauce!!! Ill seriously never buy storebought again plus I just really like knowing exactly what is in my food! The toppings are simply sliced tomatoes, torn fresh basil, and shredded mozzarella !
This is the crust recipe I used but I added in a Tbsp of honey…Not sure why it has salt listed two times…Im guessing they meant sugar for one but whatever.

For the sauce I just used 1 can of tomato paste, a can of water (tomato paste can), 1 tbsp basil, 1 tbsp oregano, salt and peper, 1 tbsp honey, and 1 tbsp Evoo..Whish everything together until combined . Im not sure where I saw this recipe but if its you, let me know and Ill credit you!

While at the mall I found a pizza stone for get this…..14.00…of course I got it and was dying to try it out so I just made a turkey pepperoni pizza! It was awesome.
