Tonight for dinner I made spinach and artichoke stuffed chicken breasts and a super simple caesar salad. The chicken is stuffed with a mixture spinach (chopped frozen spinach, defrosted and drained well), one can artichoke hearts (chopped), alfredo sauce (as much as you would like to make a somewhat think sauce ( about 1/2-3/4 cup). Stuff into chicken breasts. For the topping, I just spinkled on some parmesan cheese, a little oregano, paprika and a few sprinkles of crushed red pepper flakes. Bake at 400 for 35 mins.
The casesar salad is just chopped romaine lettuce, premade croutons, romano and parmesan cheese, and bottled caesar dressing. Yummy!
