Oven Fried Zucchini




evoo as needed for drizzling, about hmm 2 tbsp

1 large zucchini, sliced into rounds

1 egg white

1/4 cup italian breadcrumbs

1/8 cup parmesan cheese

2 tbsp romano cheese

1 tsp dried parsley

salt and pepper


Preheat oven to 400.

Spray a nonstick baking sheet with cooking spray.   Put egg white in a small bowl. Mix breadcrumbs with cheese, parsley, salt and pepper in ziploc bag. Dip each zucchini round into egg  and then into the bag with breadcrumb mixture. Shake until well coated. Lay on baking sheet, about  1 inch apart. Drizzle with some evoo. Bake 10 mins, flip, bake another 5.
