Ive saw literally hundreds of variations on this so I really dont know who to credit! lol Anyway heres how I made this one. This would be really good on a hot day with like a huge chunk of ciabatta or even focaccia.
1 yellow tomato
1 handful, about 1/2 cup, of mozzarella ( I used shredded because we were all out of fresh 😦 )
Big drizzle of evoo
salt and pepper
splash of red wine vinegar
Chop tomatoes and cucumbers. Toss together in bowl. Add in mozzarella and remaining ingredients. Let sit at room temp for about an hour for flavors to combine.
