Blueberry Balsamic BBQ Turkey Burgers

Ill be the first to admit, this is a weird combo. I love blueberries but never even considered using them in anything other than a cobbler or muffins. This turned out really delicious though. I served these burgers on ciabatta rolls with brie cheese. Jeremy cut up some sweet potatoes so we also had some sweet potato wedges that were drizzled with evoo and sprinkled with salt and pepper. The bbq sauce recipe comes from a Cooking Light cookbook. Changes are noted.

Blueberry Balsamic BBQ Sauce-

Ingredients:

2 cups blueberries

1/4 cup balsamic vinegar

3 tbsp ketchup

3 tbsp sugar- I used brown sugar

1/2 tsp garlic powder

1/4 tsp salt

I also added about 2 tbsp of molasses and 1/4 cup water

Directions:

Place all ingredients in med. saucepan. Bring to a boil, reduce heat, and simmer for about 10 mins or until blueberries are broken down and slightly thick. Remove from heat. Pour into a blender and process until smooth.

 

Turkey Burgers-

Ingredients:

1 lb ground turkey

1 small onion, diced

2 cloves garlic, finely chopped

1/4 cup italian parsley, roughly chopped

salt and pepper

Directions-

Heat 3 tbsp olive oil in large skillet over med-high heat. Combine all ingredients together in large bowl being careful not to overmix.  Divide into 4 equal portions and form into patties. Fry about 8 mins per side or until thoroughly cooked through. During the last min of cooking, top with some brie cheese.
